· Instructions: Mix cucumbers, peppers, and garlic with salt. Refrigerate for 2 hours. Put sugar, spices, and vinegar in a pan then boil for 5 minutes. Add vegetables and slowly bring to boiling point (but do not boil).

· Ingredients: Large poblano peppers, Italian turkey sausage, beef, ready-to-serve Spanish rice, Mexican cheese, enchilada sauce, and minced fresh cilantro (optional).
· Instructions:
1. Cook turkey and beef until no longer pink, breaking meat into crumbles. Add rice to the meat.
2. Cut peppers in half and remove seeds. Line a baking sheet with tin foil, cut-side down. Broil the peppers from heat until blistered.
3. Fill with turkey mixture, top with enchilada sauce and cheese. Broil until the cheese is melted. If desired, top with cilantro to add an extra kick.
