Peppers, whether sweet or spicy, are a great addition to organic gardening. They love warm weather, and with just a little bit of care, peppers will grow without any issues, rewarding you with a colorful and abundant harvest. There are many ways to make peppers, and if you're feeling creative, you can try stuffing them, which makes a great summer starter.

· Ingredients: Large poblano peppers, Italian turkey sausage, beef, ready-to-serve Spanish rice, Mexican cheese, enchilada sauce, and minced fresh cilantro (optional).

· Instructions:

1. Cook turkey and beef until no longer pink, breaking meat into crumbles. Add rice to the meat.

2. Cut peppers in half and remove seeds. Line a baking sheet with tin foil, cut-side down. Broil the peppers from heat until blistered.

3. Fill with turkey mixture, top with enchilada sauce and cheese. Broil until the cheese is melted. If desired, top with cilantro to add an extra kick.
