The aim is to encourage our community to create their own organic gardens at home. Organic gardening is a fulfilling way to grow fresh, chemical-free produce right in your backyard. So now, let's take a look at what you can grow and how to make the most of your homegrown veggies.

Stuffed Peppers

Peppers, whether sweet or spicy, are a great addition to organic gardening. They love warm weather, and with just a little bit of care, peppers will grow without any issues, rewarding you with a colorful and abundant harvest. There are many ways to make peppers, and if you're feeling creative, you can try stuffing them, which makes a great summer starter.

· Ingredients: Large poblano peppers, Italian turkey sausage, beef, ready-to-serve Spanish rice, Mexican cheese, enchilada sauce, and minced fresh cilantro (optional).

· Instructions:

1. Cook turkey and beef until no longer pink, breaking meat into crumbles. Add rice to the meat.

2. Cut peppers in half and remove seeds. Line a baking sheet with tin foil, cut-side down. Broil the peppers from heat until blistered.

3. Fill with turkey mixture, top with enchilada sauce and cheese. Broil until the cheese is melted. If desired, top with cilantro to add an extra kick.

 

Pickled Cucumber

Cucumbers are easy to grow and do best in warm weather. Make sure to spread them out and grow them on a trellis. Once they are ready, you can use them to make pickled cucumber, which is a great summer side dish. Picture yourself creating your very own pickled jar of cucumber from start to finish. Just the thought itself is already so satisfying!

· Ingredients: Cucumbers, green and red peppers, garlic, salt, wine or cider vinegar, white sugar, turmeric, celery seeds, and mustard seeds.

· Instructions: Mix cucumbers, peppers, and garlic with salt. Refrigerate for 2 hours. Put sugar, spices, and vinegar in a pan then boil for 5 minutes. Add vegetables and slowly bring to boiling point (but do not boil).


Strawberry Kale Salad

Strawberry and kale? More like heaven on a plate! Kale is a nutrient-rich leafy green that grows well in cool weather, making it great for the upcoming autumn season. Mixing it with strawberry adds a taste of summer to your palate.

· Ingredients: Kale, strawberries, olive oil, cider vinegar, honey, salt, peppers, bacon, fresh mint, cheese, and toasted almonds.

· Instructions: Mix olive oil, cider vinegar, honey, salt, and peppers for dressing. Place kale, strawberries, bacon, and mint in a bowl with dressing. Sprinkle with cheese and almonds.

 

Minty Peas and Onions

Are you a fan of onions? They are so easy to grow and great for organic gardening. From starters, soups, side dishes to mains, onions are versatile for preparing all sorts of healthy meals. One of which we selected includes stir fried minty peas and onions. A balance of sweet, sour, soft, and crispy taste and textures where you can enjoy the chemistry of the ingredients in your mouth with just one spoonful.

· Ingredients: Onions, peas, sweet red peppers, canola oil, and minced mint.

· Instructions: Sauté onions and red peppers in oil until soft. Add peas and cook for 10 minutes or until heated through. Stir in mint and cook for 1 minute.

 

Pumpkin and Bacon Soup

Pumpkin is one of the easiest vegetables to grow and it's full of nutritional value. This is one of the ultimate home-cooked dishes you can make with this beloved vegetable. Great for lunch or dinner.

· Ingredients: Pumpkin, vegetable or chicken stock, water, onion, curry powder, garlic, bacon, and sour cream.

· Instructions: Cook onion and garlic until tender. Add bacon and cook for another 5 minutes. Stir in pumpkin and cook until softened. Add stock, water, and curry powder; bring to a boil, then simmer for 30 minutes. Puree the soup in a blender until smooth. Serve with sour cream.
